Ingredients:

• 1 cup of shev (thin, fried gram flour noodles)

• 1 medium onion (finely chopped)

• 1 tablespoon oil

• 1 teaspoon turmeric powder

• 1 teaspoon garam masala

• 1 teaspoon red chili powder

• Salt to taste

• Fresh coriander for garnish

Steps to Prepare:

• Heat the Oil: Begin by heating oil in a pan. Once it’s hot, add finely chopped onions and sauté them until they turn golden brown.

• Add Tomatoes and Spices: Add chopped tomatoes to the pan, followed by turmeric, garam masala, red chili powder, and salt. Mix the spices well with the onions and tomatoes, and let it cook until the tomatoes soften.

• Add the Shev: Lower the flame and add the shev into the mixture. Stir gently to ensure the shev absorbs all the flavors from the spices and tomatoes.

• Cover and Cook: Cover the pan and let the shev bhaji cook on a low flame for a few minutes. Stir occasionally to prevent it from sticking to the pan.

• Garnish and Serve: Once done, garnish with fresh coriander and serve hot with pav, bread or rice.
