Nutrition scientists at Punjab Agricultural University (PAU) have renewed their call for using traditional mustard oil rather than refined oils, citing concerns over health impacts linked to fatty acid imbalances. Dr. Monika Chaudhary from PAU’s Department of Food and Nutrition explained that the shift towards refined oils has been fueled by misconceptions. “The belief that refined oils are healthier than traditional oils such as mustard and canola is based on misinterpreted studies. Research showing negative effects of erucic acid, prevalent in mustard oil, was conducted on rats and does not translate to human health impacts,” she said.

Mustard oil, often favored in regions like the northeastern, northern, and eastern parts of India for its distinctive flavor, boasts a balanced ratio of omega-3 and omega-6 fatty acids, making it a healthier option compared to many refined oils. Dr. Chaudhary emphasized that while refined oils are high in omega-6 fatty acids—often up to fifty times more than omega-3—mustard oil maintains a more balanced ratio of these essential fatty acids, which is crucial for reducing chronic inflammation and mitigating risks associated with coronary heart disease, diabetes, and certain cancers.

Additionally, Dr. Chaudhary highlighted the issue of smoke points in oils. Refined oils, extracted using heat or solvents, tend to have lower smoke points and may degrade into free radicals when heated, which are linked to cancer development. Mustard oil, with its higher smoke point, avoids this breakdown, making it more suitable for cooking at high temperatures.

Despite a growing trend towards non-native oils like soybean, sunflower, and safflower, traditional oils such as mustard oil, particularly in its cold-pressed form known as kachhi ghani, remain beneficial due to their antioxidant content and stable composition. This traditional oil offers a healthier choice for cooking by maintaining dietary harmony and preventing the adverse health effects associated with the excessive omega-6 content in refined oils.
