Taste Atlas ranks three Indian states among the top culinary regions worldwide, spotlighting their signature dishes.
When it comes to food, India is a vibrant tapestry of flavors, traditions, and culinary techniques, with every region offering something unique. Recognizing this, Taste Atlas has listed Punjab, Maharashtra, and West Bengal among the “Best Food Regions in the World”, alongside a collective mention for Southern India. Punjab stands out prominently at Rank 7, Maharashtra claims 41st spot, West Bengal follows at 54, and Southern India makes its mark at 59.
Here’s a taste of the most celebrated dishes from these top-ranked states:
1. Punjab (Rank 7): Parathas
Punjab’s culinary gem, parathas, is a wholesome, indulgent delight enjoyed across India.
How it’s made:
• Mix wheat flour with ghee and water to knead a tight yet soft dough. Let it rest for 20 minutes.
• Prepare a stuffing using spiced fillings such as paneer, potatoes, or cauliflower.
• Roll out the dough, add the filling, seal it into a potli, and roll again gently.
• Cook on a hot tava using generous amounts of ghee. Serve with butter cubes, dahi (yogurt), and tangy pickles.
2. Maharashtra (Rank 41): Vada Pav

The ultimate street food of Maharashtra, vada pav is often called the “Indian burger.”
How it’s made:
• Prepare the spicy stuffing by sautéing mustard seeds, curry leaves, garlic, ginger, and green chilies. Add mashed potatoes, turmeric, and coriander with a dash of lemon juice.
• Make a thick besan (gram flour) batter using water and seasonings.
• Slit soft pav bread, layer with green chutney and garlic chutney, and stuff with the prepared potato mix.
• Dip the stuffed pav in batter and deep fry until golden and crispy. Serve hot with chutneys.
3. West Bengal (Rank 54): Shukto

• Prepare assorted vegetables like bitter gourd, drumsticks, papaya, sweet potatoes, and flat beans. Parboil some and fry others, including dal’er bori (lentil dumplings).
