The idea behind the recipe is simple yet clever: blend fruits and vegetables into cookie dough so children can enjoy a sweet snack while also getting some added nutrition.

According to Roehnelt, this recipe has been a staple in her household for nearly a decade. She explained that she originally started making the cookies when she wanted her children to have a treat for school or daycare without relying on packaged snacks every day.

“I realised that if I was going to bake cookies anyway, I could adjust the ingredients slightly to make them healthier,” she shared. By blending fruits and vegetables directly into the dough, the cookies retain their sweetness while quietly adding nutrients.

Ingredients

Wet ingredients

– 2 sticks of butter (melted)

– 3 teaspoons vanilla extract

– ½ cup maple syrup

– 4 eggs

Fruit and vegetable blend (the green mix)

– 1 carrot

– 1 banana

– Several handfuls of baby spinach

– A small amount of water (for blending)

Dry ingredients

– 4½ cups flour (either oat flour or regular flour)

– 1 teaspoon salt

– 1 teaspoon baking soda

Topping

– 1 bag chocolate chips

Method

1. Begin by melting the butter and combining it with vanilla extract, maple syrup, and eggs in a large bowl. Mix until smooth.

2. In a blender, add the carrot, banana, baby spinach, and a small amount of water. Blend until the mixture becomes smooth and evenly combined.

3. Pour this green mixture into the bowl with the wet ingredients and stir well.

4. In a separate bowl, mix the flour, salt, and baking soda.

5. Gradually add the dry mixture to the wet mixture and combine until a dough forms.

6. Fold in the chocolate chips.

7. Scoop small portions of dough onto a baking tray, forming small balls.

8. Bake in a preheated oven at 180°C for about 15–20 minutes, or until the cookies turn lightly golden.

Many children hesitate when asked to eat fruits and vegetables, despite the fact that these foods are rich in fibre, vitamins, and essential minerals. Traditional cookies, on the other hand, are often nutritionally poor and can cause rapid spikes in blood sugar because they mainly contain refined sugar and processed ingredients.

The addition of blended fruits and vegetables increases the nutritional value, while using options like oat flour can provide more complex carbohydrates compared to refined flour.
