In Bengaluru, he launched Paris Panini with a modest food truck. The venture quickly became a hit, offering authentic paninis at festivals and events. What started as a single truck has now blossomed into a ₹50 crore business, boasting multiple outlets and a loyal customer base.

Beyond his inspiring journey, Nicolas offers valuable advice to budding entrepreneurs. According to him, managing costs is critical to profitability. Typically, food accounts for 28% of expenses, rent 10%, labor 15%, administration 10%, and marketing 5-10%, leaving a profit margin of approximately 15%.
