Ingredients used

For the salad: Lettuce, yellow bell pepper, cucumbers, chicken, and rice noodles

For the dressing: Almond butter, coconut aminos, apple cider vinegar, honey, fresh garlic, and fresh ginger

How the dish is prepared

The process begins with chopping lettuce into large, fresh pieces to form the base of the salad. Cucumbers and yellow bell peppers are sliced into chunky, bite-sized pieces for added crunch and texture.

The chicken is cut into small pieces and marinated using coconut aminos, honey, garlic powder, ginger, and salt. It is left to soak in the flavours for at least 30 minutes before being pan-cooked until done.

For the dressing, almond butter is blended with coconut aminos, apple cider vinegar, honey, fresh garlic, and ginger until smooth and creamy.

Meanwhile, rice noodles are cooked according to package instructions, then cooled under cold water or chilled so they are perfect for a cold salad.

To assemble, a bed of lettuce is laid out first, followed by rice noodles, cooked chicken, cucumbers, and bell peppers. The almond butter dressing is drizzled generously over the top before serving.

Explaining the nutritional value of the meal, the surgeon said, “We’ve got some protein, we’ve got some healthy fibre, carbohydrates, micronutrients, really colourful, and you can choose lots of different vegetables. Carrots work great in this, too.”
