– Poha (flattened rice): 1 cup

– Semolina (sooji): 1/2 cup

– Gram flour (besan): 1/2 cup

– Curd: 1/2 cup

– Ginger: 1-inch piece

– Green chilies: 3

– Sugar: 1 tablespoon

– Salt: to taste

– Garlic: 5-6 cloves

– Turmeric powder: 1/2 teaspoon

– Oil: 2 tablespoons (for the batter) + additional for greasing and tempering

– Eno fruit salt: 1 teaspoon

– Mustard seeds: 1 teaspoon

– Cumin seeds: 1 teaspoon

– Coriander leaves: a handful, chopped

– Green chilies (for tempering): 1-2, finely chopped

– Water: as needed

**Method:**

1. **Prepare the Batter:**

   – In a mixer bowl, combine poha, semolina, and gram flour.

   – Add curd, ginger, green chilies, sugar, salt, garlic, and water.

   – Blend into a smooth paste.

2. **Mix and Rest:**

   – Transfer the paste to a large bowl.

   – Add turmeric powder and oil. Mix well.

   – Cover and let the batter rest for 10 minutes.

3. **Prepare for Steaming:**

   – Heat water in a pan and place a stand in it.

   – Grease a steaming plate with oil.

   – Add Eno fruit salt and water to the batter. Mix well.

   – Pour the batter into the greased plate.

4. **Steam the Dhokla:**

   – Place the plate on the stand in the pan.

   – Cover and steam for about 20 minutes, or until a toothpick inserted into the center comes out clean.

5. **Prepare the Tempering:**

   – Heat oil in a small pan.

   – Add mustard seeds and cumin seeds. Let them splutter.

   – Add chopped coriander leaves and green chilies. Mix well.
