In a recent advisory, the Indian Council of Medical Research (ICMR) has raised significant concerns regarding the use of non-stick cookware, urging citizens to reconsider their kitchen choices. The caution comes amidst emerging scientific evidence linking the use of worn-out non-stick vessels to potential health hazards, including lung diseases and cancer.

Understanding the Risks of this Chemical Conundrum

Non-stick cookware, a staple in Indian households for its convenience and easy maintenance, relies on a synthetic chemical called Polytetrafluoroethylene (PTFE), commonly known as Teflon. While initially celebrated for its non-stick properties, concerns have arisen regarding the safety of Teflon-coated utensils, particularly when subjected to high temperatures.

The dangers lie in the release of these toxic fumes and harmful chemicals from chipped or scratched non-stick surfaces when exposed to temperatures exceeding 170 degrees Celsius. The pans get chipped and scratched easily after a fair amount of use over time. These fumes pose a great threat to respiratory health, potentially causing polymer fume fever and other flu-like symptoms upon inhalation.

Amplifying the concerns raised by ICMR, the Hyderabad-based National Institute of Nutrition (NIN) has stressed upon the dangers associated with non-stick cookware in its comprehensive report. Moreover, a study published in the journal Science of The Total Environment elucidates the alarming reality that even a single surface crack on a Teflon-coated pan can release thousands of microplastic particles into food. These microplastics, as cautioned by New York-based physician Dr Poonam Desai, serve as endocrine disruptors, amplifying the risk of hormone imbalances, fertility issues and cancer.

Mud pots are lauded as one of the “safest” choices which offer an organic alternative that reduces oil usage and preserves the nutritional integrity of cooked food through uniform heat distribution.

Similarly, granite stone utensils emerge as viable alternatives, only if they are devoid of chemical coatings containing perfluorooctanoic acid (PFOA), perfluoro octane sulfonic acid (PFOS), and PTFE. These utensils, celebrated for their energy efficiency and heat retention properties, promote sustainable cooking practices while mitigating health risks associated with non-stick surfaces.
